Brooklyn Breakfast Bagel

One of MY FAVORITE breakfast meals. Super easy and absolutely delicious, inspired and recreated from my Brooklyn adventures.

Ingredients

Bagel

Hand full of Tomatoes

Drizzle Olive Oil

Pinch of Basil

Soy Sausage

1 sliced Jalapenos

Salt and Pepper


Cashew Cream Cheese ( you also have the option of store buying vegan cream cheese)

1 tbsp Lemon

1/2 tsp Apple Cider Vinegar

1 tbsp Olive Oil

1 tbsp Nutritional Yeast

2.5 oz of Plain Cashews


To prepare cream cheese, start by soaking cashews at least an hour before you plan on preparing in warm water.


Start by draining cashews and placing all cream cheese ingredients into a high powered blender. Blend ingredients until a smooth cream like consistency has been reached.


Make sure that your soy sausages are able to be cut into thin strips before purchasing. Place sausages into oven and cook for recommended time.


Lightly saute tomatoes in a splash of olive oil. I would say for about 3 minutes, but don't over saute them. Salt and pepper for taste.


When the sausages are done, cut them into thin trips.


Toast bagel if preferred, then begin layering cream cheese first, then sausage, tomatoes, and top with basil and jalapenos. Add pepper on top if desired.
